Researchers will investigate whether the combined nutritional properties of its ingredients could support physical recovery and influence specific biological markers in athletes and others with increased energy requirements.

Kyprioti said her interest in melekouni began during her undergraduate thesis and grew as developments in nutritional science created new opportunities to study traditional foods and the ways their natural components interact.

“For us in Rhodes, Melekouni is not simply a healthy snack or another traditional sweet. It is our homeland, our memories and a living part of our cultural heritage,” Kyprioti said.

A Sweet Deeply Rooted in Rhodes Tradition

Melekouni has been closely associated with weddings, baptisms, family celebrations and local festivals throughout Rhodes for generations.

Its name is linked to the Greek words for honey and sesame, the sweet’s main ingredients. Although recipes can vary slightly, traditional preparation methods have remained largely unchanged, with generations continuing to follow techniques passed down through families.

In villages across Rhodes, making melekouni can become a communal occasion. Traditionally, women gather around large cooking pots, carefully heating local honey before adding roasted sesame seeds, almonds, cinnamon, cloves and citrus zest.

The mixture is continuously stirred until it reaches the right consistency. It is then spread over large surfaces, pressed using specialised tools and cut into the familiar elongated pieces associated with melekouni.

Beyond producing a beloved sweet, the communal process helps preserve traditional knowledge, stories and family customs. This has made melekouni an important element of Rhodes’ intangible cultural heritage.

Researchers Investigate Melekouni’s Nutritional Properties

Scientific interest in melekouni is focused partly on what researchers describe as the “food matrix”—the way different components within a food interact with one another rather than functioning independently.

According to Kyprioti, this approach is connected to the concept of Food Synergy, which suggests that the combined effects of a food’s naturally occurring components may differ from the effects of studying each component separately.

The upcoming research could therefore provide a deeper understanding of whether melekouni’s traditional combination of honey, sesame, nuts and spices offers nutritional properties that may be relevant to physical performance and recovery.

If approved and successfully completed, the study could also add scientific evidence to the long-standing cultural and nutritional value that the people of Rhodes have attributed to melekouni for generations.

The Nutritional Potential of Melekouni

Melekouni contains several ingredients that have attracted growing scientific interest for their nutritional properties.

Sesame, one of its main ingredients, provides lignans, calcium, magnesium and plant-based protein. Honey contains phenolic compounds and other bioactive substances that have been studied for their antioxidant and anti-inflammatory properties. Almonds add monounsaturated fats, fibre and vitamin E, while the spices contribute additional antioxidant compounds.

However, researchers are not assuming that the individual properties of these ingredients automatically translate into health benefits from melekouni itself. Instead, the proposed study aims to determine whether the complete traditional food produces measurable nutritional or functional effects.

Kyprioti also highlighted a 2017 clinical study by Barbosa and colleagues that investigated daily sesame consumption among professional football players over a 28-day period. The study reported associations between sesame consumption and reduced oxidative stress and markers of muscle damage, along with faster recovery following strenuous exercise.

The proposed Greek research would take this investigation further by examining melekouni as a complete food rather than drawing conclusions from studies of its individual ingredients.

What the Research Could Mean for Rhodes

If the study identifies measurable nutritional or functional benefits, it could add an important scientific dimension to one of Rhodes’ most recognisable traditional products.

Melekouni already holds Protected Geographical Indication (PGI) status and is widely regarded as one of the island’s signature local foods. Scientific evidence could potentially strengthen its reputation in international markets while creating a connection between Rhodes’ centuries-old food traditions and modern nutritional research.

Yet melekouni’s importance goes far beyond its potential commercial or nutritional value. The sweet remains deeply woven into the cultural life of Rhodes.

Each year, local events celebrate its history, preparation and cultural significance. One of the largest celebrations takes place in Koskinou, a community closely associated with the tradition. This year’s Melekouni Festival is scheduled for August 8, bringing visitors together to learn about the sweet and witness its traditional preparation.

Another annual celebration takes place in Soroni during the festival of Agios Silas in late July. Residents and visitors can watch melekouni being prepared using traditional methods passed down through generations.

For the people of Rhodes, melekouni represents far more than a recipe or commercial product. Its traditions survive through the communities that continue to make it, share it and serve it during some of the island’s most meaningful occasions.

Now, for the first time, this centuries-old culinary tradition is moving into the world of modern scientific research. If the findings confirm its potential nutritional or functional properties, melekouni could gain a new international identity—not only as a symbol of Rhodes’ culinary heritage, but also as a traditional food worthy of scientific attention.

Source: GreekCityTimes Rdited by Bernie

The traditional Rhodes sweet melekouni, a staple of the island’s most important celebrations for centuries, is entering a

[44,4,8
14,263,249,448
post-1611","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-greek-food","category-greek-snacks","category-sweet","tag-greece","tag-greekcuisine","tag-greeksnacks","tag-greeksweet
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet.jpg",1536,1024,false
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet-150x150.jpg",150,150,true
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet-300x200.jpg",300,200,true
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet-768x512.jpg",640,427,true
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet-1024x683.jpg",640,427,true],"1536x1536":["https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet.jpg",1536,1024,false],"2048x2048":["https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet.jpg",1536,1024,false
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet-1024x683.jpg",1024,683,true
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet-825x575.jpg",825,575,true
https://greeksnacks.com/blog/wp-content/uploads/2026/08/Greek-Sweet-590x410.jpg",590,410,true
The traditional Rhodes sweet melekouni, a staple of the island’s most important celebrations for centuries, is entering a
["GET
